Beef stews are something I grew up with and learned from my parents. My parents’ old-fashioned beef stew recipe was one of a kind and still is, but I decided to shake things up a bit and try something new!

Roast your cut potatoes in the oven for 20-25 minutes, and add the cooked potatoes to your stew just before serving. All you need is yellow or red potatoes, olive oil, salt, and pepper; you can throw them in the oven while you prepare the rest of the stew recipe.

- Roast potatoes until golden brown.
- In a large pot, cook beef until no pink remains and add butter, onions, carrots, mushrooms and garlic.
- Add tomato sauce and soya sauce.
- Sprinkle flour over the mixture and add broth concentrate, peas, and water.
- Bring to a boil, reduce to low heat, and simmer until thickened.
- Add roasted potatoes to stew.
- Serve hot, and enjoy!

Ingredients
- 1 pound Cubed Stew Beef
- 600 grams Small Yellow Potatoes 1 Small Bag
- 6 Whole Mushrooms
- 1 Large Yellow Onion
- 2 Large Carrots
- 3/4 cup Frozen Green Peas
- 3 Cloves Garlic
- 6 tbsp All Purpose Flour
- 4 tbsp Butter
- 4 tbsp Soya Sauce
- 4 tbsp Tomato Sauce
- 2 tbsp Beef Broth Concentrate
- 4 cups Water
- 3 tbsp Olive Oil
- Salt & Pepper
- Fresh Parsley Optional
Instructions
- Preheat oven to 450 ℉ (230℃)
- Cut potatoes into bite-sized pieces and mix them in a bowl with 1 tbsp of olive oil, salt and pepper. Add them to a parchment-lined baking sheet and roast in the oven for 25 minutes.
- While potatoes are roasting, chop mushrooms and onion. Peel and chop carrots into ¼" pieces. Peel and mince garlic and chop the parsley.
- Ensure you stew beef is cut into small bite-sized pieces before cooking
- Add 1 tbsp of olive oil to a large pot and add beef, salt and pepper. Cook until no pink remains.
- Add 2 tbsp of butter to the pot and add onions, mushrooms, carrots, and garlic. Cook until vegetables are slightly softened. Add tomato sauce and soya sauce. Stir to combine.
- Sprinkle flour over the tops and stir to coat. Add broth concentrate, peas, and 4 cups of water. Bring to a boil over high heat. Reduce heat to medium and cook for 6-8 minutes stirring often until stew thickens.
- Add roasted potatoes and stir to combine.
- Serve in a bowl top with chopped parsley (optional)
