How to make Moist Blueberry Cake
We started by creaming together the shortening and sugar using a hand mixer. Then, we added the egg and vanilla and whisked the dry ingredients in a separate bowl. Gradually add the dry ingredients to the cream mixture in portions, alternatively with the milk, and finish with the dry ingredients until combined.
Fold in the blueberries, and your blueberry cake batter is complete.
You can use fresh or frozen blueberries in this recipe. While I prefer wild blueberries for their smaller size, high-bush blueberries work too, and add a little more blue.
Add the cake batter to a greased pan, either a 7″ x 11″ Pyrex dish or 9″ x 9″. Spread the batter evenly and bake in a preheated oven at 165°C/325°F.
Bake for 45 minutes. If you are unsure if it’s done, you can always test with a toothpick. If it comes out clean, it’s done.

Cake
- Preheat Oven to 180℃/350℉
- Butter a 7 x 11" Baking Pan
- Cream together the shortening and sugar using a hand mixer
- Add eggs and vanilla to the mixture and blend
- Whisk the dry ingredients together in a separate bowl
- Gradually add the dry ingredients to the cream mixture in portions, alternatively with the milk, and finish with the dry ingredients until combined.
- Fold in the blueberries, and your cake batter is complete.
- Add the cake batter to the greased pan evenly
- Bake for 45 minutes. Test with a toothpick; if it comes out clean, it’s done
