Growing up, we were introduced to and grew fond of this no-bake chocolate oatmeal coconut cookie recipe. And if I were to choose a favorite addition to any dessert, it would undoubtedly be coconut. My mother’s little trick to make sure these cookies remain soft in the middle makes them absolutely melt in your mouth.

These chocolate treats are commonly referred to as chocolate frogs, which is a bit of an unusual name for them. They are also occasionally called macaroons, and they remind me of the boxes of macaroons that I used to receive in my Christmas stockings. Overall, they have a familiar and delicious taste that I can’t get enough of.

Quaker Quick 1-Minute Oats
To be sure you use the correct oatmeal, Quaker Quick 1-Minute Oats is my go-to brand for this recipe. They also have a gluten-free alternative, which I have not tried but could work in this recipe.
Step-by-step instructions:
Begin by combining all the dry ingredients in a large mixing bowl.
Then, I moved to the stove and added butter and milk to a medium saucepan. After melting the butter, I added sugar to the mixture.
To achieve perfectly moist cookies with a crispy exterior, you can use my Mom’s little trick. Start timing the boil when the liquid begins to bubble, and remove it from the stove after one minute. This will ensure that your oatmeal coconut cookies turn out just as you want.
When combining the hot liquid with the dry ingredients, mix thoroughly. To make 24 cookies, use a spoon or a cookie scoop to drop the dough onto parchment paper.
Let the cookies cool and harden for 15 minutes before serving.
No Bake Chocolate Oatmeal Coconut Cookies

- 1 Medium Saucepan

Ingredients
- 2 ½ cups One Minute Oatmeal
- 1 cup Sweetened Coconut
- ½ cup Cocoa
- ½ cup Butter
- ½ cup Milk
- 2 cups White Sugar
Instructions
- In a large bowl mix the dry ingredients2 ½ cups One Minute Oatmeal, ½ cup Cocoa, 1 cup Sweetened Coconut
- In a medium saucepan on medium heat, melt butter and add milk a sugar. As soon as the liquid start boiling, time for 1 minute.½ cup Butter, 2 cups White Sugar, ½ cup Milk
- Add liquid to dry ingredients and mix well. Immediately drop cookie mixture on parchoment paper while mixture is wet.
- Leave cookie harden on the outside before serving.
