PB Energy Bites
It’s mid-afternoon and you are grasping for that last bit of energy to finish off your busy day. These PB Energy Bites may be the quick fix you are looking for.

These high-protein, healthy peanut butter balls are full of goodness and simple to make. One energy bite will satisfy you until your next meal, keeping your daily energy up and your calories low.
Measure your dry ingredients and mix them in a medium mixing bowl.
Fold in measured wet ingredients until mixed thoroughly. Scoop mixture into your hands and roll to form PB energy bites. Place bites on a tray using parchment paper.
When forming energy bites, dampen your hands to avoid sticking.
Although you can eat this no-bake treat right away, I prefer to chill them in the refrigerator for about an hour first.
Ingredients
- 1 cup Rolled Oats
- 3/4 cup Shredded Coconut
- 1/4 cup Ground Flaxseed
- 4 tbsp Mini Chocolate Chips
- 3/4 cup Natural Peanut Butter
- 1/4 cup Pure Maple Syrup
- 1 tbsp Coconut Oil
- 1 tsp Vanilla
Instructions
- Mix dry ingredients (oats, coconut, flaxseed, chocolate chips) together in a medium bowl.
- Fold in wet ingredients (peanut butter, maple syrup, coconut oil, vanilla) until mixed thoroughly
- Scoop mixture into your hands and roll into a ball. Makes 12 bites.
